Bean and Bacon Soup

This soup tastes just like that brand your mom always made when you were a kid.  It is so good.
​Ingredients:

3 15 oz cans navy beans (rinsed and drained)
4 slices bacon cooked and crumbled
1 medium onion, chopped
1 stalk celery, chopped
1 large carrot, chopped
2 T tomato paste
4 C chicken broth
2 bay leaves
Instructions:​
  1. Blend 1 can of beans with 2 cup of water.
  2. Cook bacon and set aside.  (I like to cook my bacon in the oven it makes less mess that way)
  3. Spray medium skillet with cooking spray and saute onions, carrots and celery until softened.  
  4. Transfer to  slow cooker and add tomato paste, beans, broth and bay leaves.
  5. Cover and cook 8 hours on low.  
  6. Remove bay leaves and blend 2 cups of the soup in blender and then put back into the soup (this will help to thicken the soup).
  7. Stir in bacon and serve.
